Poffertjes (Tiny Pancakes)

Poffertjes are traditional Dutch cakes, somewhat similar in texture to American pancakes. Poffertjes cooked in a special iron pan with several small shallow marks on the ground. It is usually served as a snack, not as food for breakfast, often served with powdered sugar.

200g flour
40 g butter or margarine
350 ml milk
8 g yeast
2 g salt

Heat until warm milk.
Mix flour with salt and a depression in the middle.
The yeast with some warm milk and pour into the well, and 2 / 3 of the remaining milk.
Stir for a smooth thick paste. Add the remaining hot milk stirring (!).
Cover the dough with a damp cloth and leave in a warm place (eg on a radiator) for 1 hour.
Poffertjes A special grease pan with butter.
Fill each "pit" of the roast with some of the dough and pan until golden brown both sides.
Poffertjes hot with butter and powdered sugar- Have fun!
I love them with butter, powdered sugar, then a little maple syrup, is what they serve here OZ. yummmm.
